Happy Passover

I haven’t updated my blog in a while and for that I am sorry. I have been having a brain fart and not too much has changed in a while. Last week I did not go on the computer or internet at all and it really felt kind of great. I have been so exhausted after working all day and then going to the gym.

This weekend I spent time with my family, shopping and catching up on other blogs that I follow. My aunt and uncle have been traveling (RVing) through Florida for the past 3 months so it was really nice to see them again. Also, I went shopping at BJ’s (wholesale) for our trip.

Yes…I said trip! Sam and I are leaving Saturday for ARUBA!!!!

We have been there many times before, but I still can not wait to get away and enjoy some beautiful warm weather, sunny skies, and crystal clear blue water. I bought some sun tan lotions and necessities. 

As some of you might know tonight is the first night of Passover.  So Happy Passover to everyone who celebrates. For those of you who do not this is a little info in case you were wondering.

It is the first of the three major festivals with both historical and agricultural significance.  Agriculturally, it represents the beginning of the harvest season in Israel, but little attention is paid to this aspect of the holiday. The primary observances of Pesach are related to the Exodus from Egypt after generations of slavery.

On the first two nights of Pesach, we have a special family meal filled with ritual to remind us of the significance of the holiday. This meal is called a seder Seder (in Hebrew).  We read from a “siddur” Siddur (in Hebrew), (prayer book). Pesach lasts for seven days (eight days outside of Israel).

Happy Spring!!! I had a very busy weekend and missed out on some beautiful weather. Sam and I went to a Bar Mitzvah for a family friend. It is a whole weekend thing. We had services and a dinner Friday night. Saturday morning we had another service and lunch. Saturday night we had the big huge party and Sunday morning was a brunch.

The party Saturday night was a blast! Sam and I danced the whole night (we danced more Saturday then we did at our wedding). It was great because the party was at Linwood Country Club (the same place we had our wedding). Also, I found a new drink that was amazing…Vanilla Vodka with Ginger Ale = Tastes like cream soda + I had some shots with the family.

During my free times on Saturday and Sunday I did get outside as much as I could and Sam and I took Bruiser for a lot of walks. Also, Sam and I worked in the backyard cleaning up the big and small grill so we can start using it.

Second

I made an awesome easy meal the other night that I would love to share with all of you. I made Whole Wheat Pasta with Newman’s Own Alfredo Sauce.

This was the BEST Alfredo Sauce I have ever had and it was the healthiest one on the shelf at the store so I will definitely be buying and using this again. I give this FIVE STARS!!!

I cooked whole wheat Orecchiette pasta (they are really neat and look like helmets)

I added the sauce right from the jar and mixed it with the cooked and drained pasta. I let it simmer and heat up for a couple minutes and SERVED!

This would be great with chicken and broccoli too.

First Run Outside

I am just getting over a cold and it was so nice so I decided I would try running outside. I have fallen in love with the treadmill at the gym, but it was a totally different experience running outside. I was shocked at how well I did when I was out running. I did have to stop for cars and I would stop my watch.

I ran 3.68 miles in 41 minutes 58 seconds

311 Day

I know I am a day late, but I hope everyone had an awesome and great 311 Day! I am a huge fan of 311 and have been for over 14 years (Now I feel old). March 11th every year they have a huge concert in New Orleans. This year there was a convention and so they moved it to Vegas.

It was great because for about $11 you could see the concert live on your computer. Since Sam (my hubby) is great with computers he hooked it up to our TV. Due to the time difference it didn’t start on the East coast until 10:30 PM. Since it is a special concert dedicated to fans it was 5 hours. I was in my 311 glory.

Also, on to more important stuff like my JOURNEY…

I was planning on doing a 5k tomorrow for St. Pats Day. However, the weather is not the greatest. It is raining and 100% chance of rain tomorrow with about 20-40 mph winds. The race will only be canceled if the Police Department does not think it will be safe enough. I was looking forward to my first race, but I know there will be many many more to come.

Even though the weather is miserable should I still run????

Blood Work and Code Blue

Today started off a little different and I should have known it would be your normal kind of day. I woke up earlier then usual fixed my breakfast (that I couldn’t have, yet) and headed to get blood work. I had an appointment so I wasn’t to concerned when I saw a huge crowd in the waiting room. I signed in and sat down and waited and waited. They never looked and the sheet and so when a guy went back before me and I heard he had an appointment for half hour after mine I got up to raise some hell. Luckily I did not have to get mad because they felt terrible and took me back right away.

I couldn’t get out of the place fast enough to drink my breakfast (protein shake) and I sat in the parking lot and got it out of my insulated bag and drank as I drove to work.

Everything was going normally until they announced a code blue (YES IT WAS REAL). It was a little scary at first and I didn’t know what to expect, but we just told the kids it was a drill. Supposedly 2 guys were at the Kmart a couple blocks away stealing wallets, had drugs and a weapon and ran on to the playground (while the Pre-K was outside playing). The local Police got there right away and had a K-9 unit out there right away and they finally caught the 2 guys within the hour.

I was ready for the long hall and got out a puzzle to work on with some students, but as soon as I did they announced it was over.

After work I went to the Chiropractor and talked with Terri to try and get her to start a blog of her own. Also, she gave me pointers for my blog. Then I headed home to change and hit the gym. So of course I ran (my New Passion) I ran 3.1 miles in my lowest time so far in 34 minutes.

Sorry this post is very boring tonight. I am tired and need to get to bed.

Also, there is a 5k race on Saturday, but we are supposed to get slammed with rain and winds. What do you think I should do run or not????

Healthy Carrot Cake

I was given a great recipe for carrot cake so I tweaked it a little and made it a little bit more healthy. Even though it was healthy it tasted amazing.

Ingredients:

1 cup applesauce

3 eggs

3 cups shredded carrots (approx. 4 large carrots)

1/2 cup agave nectar

2 cups whole wheat flour

1 tsp. Baking Soda

2 tsp. cinnamon

Topping:

5 oz. Neufchatel Cheese

3 Tbsp. Agave Nectar

1/4 tsp. vanilla extract

Directions

  1. Mix wet ingredients together.

  2. Add shredded carrots

  3. Mix dry ingredients in separate bowl

  4. Mix 2 bowls together.

  5. Grease 9X13 pan (could use any kind of pan or make cupcakes)

  6. Bake 350 degrees for 25 minutes.

I figured out all the nutritional information (using a 9X13 pan and cut into 12 pieces).

Calories: 188

Fat: 4.1

Carbohydrates: 40.2

Protein: 4.6

Sugar: 18.5

Melting Pot

Last weekend I went to the Melting Pot in King of Prussia, PA for my cousins 30th Birthday. It was a hard place to go to while trying to eat healthy. I think I made smart decisions about what I ordered.

First CourseAppetizer Cheeses of your choice served with breads, vegetables and apples. I researched the nutrition facts before I went and found out for some of the cheeses it is 1000+ calories for 1 cup. I opted not to order any appetizers and so glad I did. They mix and melt the cheese on little burners at your table. Our water first poured in about 1 – 1.5 cups of oil then added spices and cheese. I just looked so unhealthy and I was not tempted at all. They give you so many veggies, apples and breads to dip so I took a small cup of veggies and snacked on those until my salad came.

Salad I ordered the house salad with the house dressing (vinagerete) which was really good and a little small it could have been a little bigger.

Main Course For the main course you cook your own food. Sam and I shared dinner so we ordered the steak and shrimp. They gave us 6 shrimp and then 6  (1 inch) cubes of steak. It did not look like a lot for us to share, but it turned out that it was just perfect for us and it is so easy to over eat at these types of places. I asked the waiter what the healthiest cooking option was and went with the vegetable bouillon. The other options were oils and wines. The dinner came with broccoli, mushrooms, and potatoes. I cooked these up in the pot along with the shrimp and steak. Just be careful of all the dipping sauces that they give you. It is added calories that were not necessary. Our steak, shrimp and veggies had loads of flavor and we did not need the sauces.

Dessert – We could not leave without having dessert and I splurged a little here, but did not feel the slightest bit guilty. Sam chose the dark chocolate with marshmallow and crushed Oreo’s.  Along with the chocolate fondue they give you small bite size pieces of rice krispie treats, brownies, marshmallows, pound cake, strawberries, and bananas. YUMMY!


*What concerns me the most about this restaurant is that on their website they do not share any nutritional information.  It should be mandatory that all restaurants reveal all nutritional information. Diet Facts has a great assortment of restaurants 514 to be exact.

**I found this article, “Health Care Bill Mandates That Restaurants Display Nutrition Information on Menus” from CNS NEWS very interesting.  They state that restaurant chains are required to display nutrition information. However, it is only mandatory if the chain has 20 or more stores.
