As you know from reading I have recently began working out and eating right. It will be a week tomorrow and I feel FANTASTIC!!! Words can not describe how good I feel. I am really enjoying trying new things to cook and eat. Every morning I have been eating oatmeal and this mornings oatmeal is a real winner. Everyone has to try this right away if you haven’t already.

Oatmeal with Banana

1 cup of Light soy milk with 1/2 cup of oatmeal and then when it is almost finished I sliced in a banana. It makes the banana real soft and delicious. You don’t even need any seasoning like sugar, butter, cinnamon. (I mean you could if you want, but it is not needed). Like I said words can not describe this little bit of heaven.

Today was my second training session with Deon and it was great we focused on a lot of upper body, but with some squats, lunges and abs mixed in. We did the workouts in groups of four and then went back through and did them again, but just changed up the form a little which worked multiple muscle groups. Really neat how he works you out. After the workout with Deon (that was an hour) I hopped on the treadmill and did my 5 intervals with heart rate at 140-150 for 5 minutes and then heart rate at 160-170 for 2 minutes. I completed 2.44 miles in 40 minutes. I know it takes me a while, but this is a good start for me and I am very pleased with my progress so far.

I have been journaling all my workouts and what I eat everyday into a weekly planner and yesterday I was looking back on my workouts and it was amazing to see how much they have improved over such a short amount of time. Check out my Workouts to see my progress. Also, looking at my foods and snacks they have gotten a lot better over the week and I don’t feel like I am depriving myself. Like tonight at dinner they had ricotta donuts for dessert and I was not even tempted to eat one. I just realize that I am on a Journey to better myself and make me a healthier person and I am working hard so why should I sabotage myself.

My first noticeable change that I can see besides feeling great is my rings. About a week ago they were getting so tight on my finger that I thought they would have to be cut off or turn my finger blue and make it fall off. Now I can turn them around with no trouble and they are loose still not too loose where they might slip off.


Feeling Good

I have been working out and eating so much better and I am feeling so AMAZING! Well, besides being incredibly sore and needing help sitting down. It is rather hilarious to see me just trying to sit down on the toilet to go to the bathroom. I have to put one hand on the seat and then lower myself down. It is really kinda funny. I have been doing cardio since Saturday for at least over 45 minutes and on Monday I had my first personal training session with Deon.

Training Session

My first session was a GREAT workout, but it was also for him to access me and see what I can and can not do.  I have really good form, posture, technique, and balance (thanks to yoga). I need work on stamina and endurance which will come with time and more cardio.

The workouts that he does are not just doing one muscle group, but at least 2 or 3 at one time. For example you are squatting while doing bicep curls and then lifting the weights over your head. It is a TOTAL body workout.

Eating Healthy

For the past couple of days I have been eating so much better and even refusing sweets and unhealthy foods. Sometimes it is hard, but since I am feeling so good about what I am doing I do not want to sabotage my hard work. I have been eating more salads, oatmeal, fruits, vegetables, Tilapia, and I even cooked Salmon.

So that gets me back to my dinner tonight. I was standing at the fish counter looking at all the fish. The man behind the counter asked what I wanted and I was like I don’t know how to cook fish. So he said pick a fish and I can guide you on how to cook it. So I picked Salmon and gave it a shot. It was actually really amazing and I know I will be buying it and making it again in the future.


  1. One fillet of  Salmon
  2. Heat pan with some EVOO
  3. Add fish skin side down and cook on Medium heat
  4. When it looked half way done I flipped it over to cook the other side
  5. Flip back over and add glaze
  6. Serve and ENJOY! 🙂


Whisk together about 2 tablespoons of agave nectar, tablespoon honey mustard, and a tablespoon of light brown sugar.


I started this blog because I am looking to make a lifestyle change. I want to become a more healthy eater as well as to lose A LOT of weight. I  just joined a gym today and I am going to be training with a trainer 2-3 days a week. I am really excited to be starting this new journey in my life. It was a real eye opener this morning when he took all my measurements and fat %. I knew I was out of shape, but when you hear it from someone else and see it on paper it is totally different. I am not going to be sharing my information just yet because trust me it is horrible and I don’t think I am in the right state of mind and have the confidence to share it. Hopefully in time I will be able to share the information with you as well as my weight loss goals and journey. Lets just say to get healthy I am going to be loosing close to 60 pounds. I am not going to be giving myself any type of time limit because I know these things take time. My trainer and I this morning set up 3 short goals and depending how fast I am progressing we can tweak things. My first goal is to lose about 15-20 pounds, but again there is no time limit.

With my training sessions I also have a Cardio plan and a nutritional plan to follow where I can lose anywhere from 2-4 pounds a week. For the first week my cardio plan is on the treadmill and keep my heart rate at 140 for 5 minutes then my heart rate at 160 for 2 minutes and do 5 intervals of that. Doing these intervals means I am on the treadmill for at least 35-45 minutes.  Next he will up my heart rate and keep it steady for a longer period of time.

I have to take the time to THANK my father in-law for everything because without him I would not be so lucky to have a wonderful husband and a gym membership and trainer to get my butt into shape. He does not read my blog, but it is the fact that when eer I can get a chance to thank him I will because he is literally changing my life.

One Pan Chicken and Roasted Potatoes

I made a killer chicken dish tonight that I got from Womens Health called One Pan Chicken.


  • Boneless chicken breast cut into pieces

  • salt and pepper (or any spices you like)

  • 2 cloves of garlic (minced)

  • 1 can (15 ounces) diced tomatoes (drained)

  • 3 heaping handfuls of baby spinach


  1. Season the chicken with salt and pepper to taste.

  2. Coat a large nonstick skillet with cooking spray, and place it over medium heat. When it’s hot, add the chicken and cook for 5 to 10 minutes, or until it’s no longer pink and the juices run clear.

  3. Remove the chicken to a plate, covering to keep warm. Add the garlic to the pan and cook a couple minutes or until fragrant. Don’t burn! Add the tomatoes, spinach and any other veggies (ie mushrooms) that you like. Cook for about 3 minutes, or until the liquid is reduced by half. Put the chicken back in the pan and stir. Adjust the seasoning, if necessary.

  4. Before serving you can sprinkle with a little parmesan cheese.

  5. Enjoy! You can eat it like this or over pasta or rice.

Garlic and Rosemary Roasted Potatoes

I diced some baby potatoes (red bliss, I think they are called) put them on a foiled baking sheet. Covered in EVOO, garlic powder and rosemary. I put them in the oven and forgot about them. I think it was anywhere from 20-30 minutes at 350 degrees. YUMMY!!!

Pasta with Meat Sauce

Growing up I was never a huge fan of ground beef. I would never eat hamburgers, meatballs, and meatloaf would make me gag.  A year ago something changed and I started eating meatballs, hamburgers and now I not only eat meatloaf, but I make a great meatloaf (recipe to come soon). Tonight I made homemade meat sauce. I made Mary’s (from food, fit & fun) “My Favorite Tomato Sauce”

  • 1 big can of Whole Peeled San Marzano Tomatoes
  • 1 small can of Tomato Paste
  • 2 cloves of garlic
  • Sprinkle of Dried Oregeno & Parsley
  • Fresh Basil
  • Olive Oil

Saute a small amount of olive oil and garlic over medium heat in a big pot.  Be careful not to burn the garlic!!  After the garlic has had a chance to saute, add the can of Whole Peeled San Marzano Tomatoes and break the tomatoes up with your hands or a wooden spoon.  After the tomatoes are mostly broken up, add the can of Tomato Paste, dried basil, dried parsley, and fresh basil.  Use your judgement with the amounts that you put in.  Bring up to a boil and then let simmer for as long as you can!

That is Mary and Christina’s Tomato sauce. They are both very similar and are Italian so you know it is gonna be good.

I made there sauce and browned some ground beef in a separate pan and then just mixed them together and violla you have meat sauce. I added the pasta with the sauce. You can use any pasta that you like, but I LOVE Rozini Smart Taste

Cream of Broccoli Soup

I am really proud of myself because I have only made homemade chicken noodle soup once before and I am not a big soup maker. So tonight I made homemade cream of broccoli soup. You have to try this recipe it was soooo GOOD!

Forgot to take a picture of my soup, but this is what it looked like.


  • 4 tbsp margarine
  • medium chopped onion
  • 2tbsp all-purpose flour
  • 1 cup of heavy cream*
  • 1 cup of nonfat milk
  • 2 cups chicken broth
  • 4 cups of broccoli
  • dash of oregano
  • pinch of ginger
  • salt and pepper to taste
  • Half a bag of mild cheddar


  1. Heat the butter in a nonstick pot over medium heat. Add the onions and cook for five minutes, stirring occasionally.
  2. Raise the heat to medium and stir in the flour, and seasoning and cook for 2 minutes.
  3. Add milk and broth and cook for 8 minutes.
  4. Add broccoli and cheese. Cook for 6 minutes.
  5. Puree the mixture in the blender.  Make sure you only fill the blender half way and do it a couple of times.

Makes 5 1 cup servings.

    *To make it healthier you can use 2 % milk instead of heavy cream.

Wicked and Max Brenner

Last night I went to Philly to see Wicked. My mom and I drove up early parked and walked around her old stomping grounds. When she finished High school she went to Business School at 1516 Spruce and at the time it was the Levitan School of Business. So we found the building and it was amazing to just picture that my mom used to go to school there and imagine how things must of looked back then.

We were not quite sure where to go for dinner so we walked into Fido Irish Pub and it was seat yourself and it looked cool and relaxing, but I was not liking the vibe of the place. I did not like how your had to search for your table. My mom and I are not big drinkers so we were not going to be ordering any drinks.

We walked down the street to a place I found online, but was not sure about. I really wanted to try it because they have places in New York, Australia, Philippines, Singapore, Israel and Philadelphia. How lucky are we to have such a unique restaurant near us.  

Max Brenner is the most amazing restaurant in the WORLD!!! It was so cool and I can not wait to go back soon. I love hot chocolate and well any chocolate at all is great. As soon as you walk in the smell of chocolate over whelms you. My mom did not have much time to wait so we sat at the bar which I think was the best place to sit. We got to see all the drinks being made and got more one on one connection with the people behind the bar. Everyone was really friendly and it made you feel so welcome. I had a hot chocolate that was so creamy and thick and delicious. I had dessert for dinner. I had a banana, chocolate, hazelnut crepe.  Afterwards I went into a chocolate coma…haha. I can’t wait to take Sam back as soon as possible.

We saw wicked at Academy of the Arts which is an old beautiful theater.

Wicked was absolutely amazing and it makes you look at the Wizard of Oz in a whole new light. I love this new spin on the old classic more. I was always a fan of the Wizard of Oz and this was even better then expected.

The show starts out with the Elphaba who becomes the wicked witch of the West being born green. She is an outcast and you find out that her mother was killed while having her younger sister. She cared for her sister all of her life because she was born with her feet crossed which left her in a wheel chair and lead to their mothers death. Elphaba was always blamed for her sisters disability and her mothers death. Elphaba and her sister Nessarose go to Shiz University. Make a long story short Elphaba is actually good and becomes friends with Galinda who becomes Glinda the Good Witch. Glinda falls in love with a prince who doesn’t love her, but instead falls in love with Elphaba. Elphaba is trying to save all the animals in the Emerald City because the Wizard is trying to harm them by caging them up and not allowing to talk or teach at the University. In the end she fakes her own death so they stop trying to find her and she spends the rest of life with the Prince she earlier put a spell on him and made him into the scarecrow.

The show was absolutely amazing, the music, the actors, the set was great. I would highly recommend that everyone see it if they get the opportunity.
